Ingredients

• 2 carrots
• 1 cm piece of ginger
• 1 handful of parsley
• 50g pumpkin seeds
• oil
• half a lemon
• chili – optional

Instructions

1. Finely grate the carrots and the ginger and place them in a salad bowl.
2. Chop the parsley and add it over the carrots and ginger.
3. In a small pan (without using any oil) toast the pumpkin seeds. And add them in the salad bowl.
4. Add the chopped chilly (if using).
5. Squeeze the lemon juice on top and add olive oil to taste.
6. Gently mix all the ingredients.
